Fernando de Noronha is 545 km from the coast of Pernambuco. All goods that arrive on the island come by ship or by plane, with transport costs and times that limit what is feasible to serve in a restaurant. This is the operational context that defines the archipelago's culinary scene, in operation since 2011.

The agroforestry system as infrastructure

Pousada do Vale's agroforestry system occupies part of the 25,000 square meter Jardim Elizabeth property. It is not an ornamental garden nor a token kitchen garden: it is a permaculture and agroecology system in continuous operation for over a decade, with real production directed to the restaurant kitchen.

On an island where most fresh ingredients travel at least 545 km before reaching the plate, the distance between harvest and kitchen — about a hundred meters in the case of Vale — is an advantage that can be tasted in the flavor, texture and consistency. It is also what allows maintaining a signature menu without depending on unstable supply chains.

Breakfast

Served in the restaurant's main dining room. Includes fresh agroforestry fruits, house-made breads and cakes, cheeses, cold cuts, freshly prepared eggs, juices and coffee. Included in the daily rate for all suite categories.

Lunch

Signature menu with dishes combining agroforestry ingredients, island fish and contemporary cooking techniques.

Dinner

The restaurant's main service. Table set, intimate lighting and live music every night. The dinner menu is more extensive than lunch and includes starter, main course, dessert and pairing options.

Pool menu and room service

For pousada guests, there is a reduced menu served by the natural stone pool: sandwiches, salads, drinks and appetizers. Room service is available at no additional charge upon request at the front desk.

Why Restaurante Do Vale stands apart from the island average

Three factors explain the restaurant's positioning within Noronha's culinary scene:

Continuous own production. The 2011 agroforestry system supplies the kitchen daily. Most restaurants on the island depend entirely on external suppliers.

Full operation from breakfast to dinner. Operating three daily services is rare in Noronha, where most restaurants serve only dinner.

Live music every night. Fixed live music program at dinner, in a format that respects the dining ambiance (no audio overlap).
